Ckachcha Rauzan or skachcha raguzana (Scaccia Rausana) - Traditional puff focaccia stuffed with Ragusa (Sicily).
you need:
For the dough:
400 g flour from durum wheat (wheat flour)
120 ml of water 50 ml white wine 50 ml
EV olive oil
1-2 hours. L.Salt (to taste)
1- 1½ hours. l.sugar (optional)
In a food processor, mix the flour with the salt and sugar.In a small bowl, mix water with wine and olive oil.Turn processor on high speed.By adding a thin stream of water mixed with oil and wine, knead a smooth elastic dough.Put the dough in oiled bowl, cover with cling film and set aside for 30 minutes.
For the filling:
2 eggplant (300-350 g)
400g chopped tomatoes in juice 2 cloves garlic
½ hours. L.sharp pepper (optional)
1-2 h. liter.sugar (optional)
250-300 g grated cheese Provola (Cacio cavallo)
salt (to taste)
2 tbsp.l.olive oil
Preparation:
Peel and cut the eggplant into small cubes.Preheat a frying pan with 1 tbsp.l.olive oil.Put the eggplant and stir fry until golden brown.Remove from heat and cool.
Finely chop the onion and garlic.Preheat a deep skillet with 1 tbsp.l.olive oil.Fry the onion and garlic for 1 minute.Add the chopped tomatoes, salt, sugar and hot pepper.On a small fire to simmer for 10-11 minutes.Remove from heat, cool.
Preheat oven to 210 degrees C. Shots baking tray with baking paper.
Put the dough on a floured work surface.Roll out the dough into a rectangle (oval) thick 1½ -2 mm.

Note!
Like any traditional dish, the absolute and single recipe of focaccia does not exist.Along with the fresh dough (for pasta) can be found in the same recipe with yeast dough.There are many variations of toppings from the most "primitive" with tomato sauce and garlic to a more "refined" with cheese and ham.
